Knife Care
Hand wash and dry your knife immediately after use. Do not place it in a dishwasher. Avoid cutting frozen food, bones, or other hard materials unless the knife is designed for that purpose.
Store the blade in a knife block, saya, blade guard, or on a suitable magnetic strip.

Major chip repair, thinning, rust removal, reprofiling, and restoration work are not included.

Made in Japan and finished by craftspeople in the renowned Tsubame-Sanjo metalworking region, this multipurpose knife is designed for preparing vegetables, boneless meat and fish.
Its 165mm molybdenum-vanadium steel blade features an extremely fine saw-style edge. This combines characteristics of a straight edge with the gripping action of a serrated blade, helping it cut cleanly through delicate or slippery ingredients while maintaining its cutting performance over extended use.
The rounded, hollow stainless-steel handle reduces weight and fits comfortably in the hand. A smooth transition between the blade and handle eliminates the deep seam found on conventional handled knives, making the knife easier to keep clean.

Care
Although the manufacturer describes the knife as dishwasher safe, hand-washing is recommended to preserve its edge and finish. Wash with mild detergent after use, rinse thoroughly and dry immediately.
Use only on a suitable wood, rubber or soft-plastic cutting board. Do not use it on glass, ceramic, stone or metal surfaces.
Do not use the knife for bones, frozen food, hard shells or prying.
Sharpening note
This knife has a specialized fine saw-style edge rather than a conventional smooth edge. Sharpening it like a standard double-bevel knife may remove or alter the micro-serrations. Professional assessment is recommended before sharpening.
