BEST FIRST STONE

BASIC SETUP
Choose the starting grit based on the condition of the edge.
The stone must not move while you work.
Keep the surface appropriately wet according to the stone’s instructions.
Use a suitable lapping plate or flattening stone.
Keep the work surface dry, stable, and protected from slurry.
Clear light helps with edge and burr inspection.
BASIC DOUBLE-BEVEL PROCESS
This overview is for standard double-bevel kitchen knives. Traditional single-bevel knives require different knowledge and technique.
Check for chips, bends, uneven bevels, rust, and previous damage.
Follow the water instructions and confirm the surface is level.
Match the established geometry when appropriate. Consistency matters more than chasing one universal angle.
Work heel to tip with controlled strokes and even coverage.
A consistent burr on the opposite side shows that you reached the apex.
Repeat until the burr moves back across the entire edge.
Finish with progressively lighter strokes to reduce burr size.
Remove remaining burr material, clean the knife, and test safely.
The appropriate angle depends on steel, geometry, thickness, intended use, and the maker’s design. Matching the existing bevel is often a better starting point than forcing every knife to the same number.
BURR FORMATION
A burr is a thin fold of metal that forms on the side opposite the stone as sharpening reaches the cutting edge.
With the knife stationary and facing safely away, check from the spine toward the edge. Never slide a finger along the edge.
A continuous burr shows that the apex has been reached along the full edge.
Continued heavy grinding after burr formation wastes steel and can make deburring harder.
Alternate light strokes and use an appropriate finishing or stropping method.
The edge may feel sharp initially but fail quickly when weakened burr material folds or breaks away.
STONE MAINTENANCE
A dished stone can create inconsistent bevels, rounded edges, and poor contact.
STEP 1
Draw a light pencil grid to reveal low areas during flattening.
STEP 2
Use water and even pressure across the full surface.
STEP 3
Continue until the pencil marks disappear evenly.
STEP 4
Lightly chamfer stone edges when appropriate to reduce chipping and catching.
Regular light maintenance is easier than correcting a deeply dished stone.

SINGLE-BEVEL
Deba, yanagiba, usuba, and similar knives have specialized geometry. Incorrect sharpening can damage the large bevel and hollow back.
