BEST FIRST STONE

Approximately 1,000 Grit

A stone around 800–1,200 grit is the most useful first whetstone for routine sharpening.

REPAIR SETUP

Coarse + Medium

Add a coarse stone for chips, heavy dullness, faster steel removal, and geometry correction.

REFINING SETUP

Medium + Fine

Add a 2,000–3,000 grit stone to refine a routine edge without necessarily over-polishing it.

More grits do not automatically create a better edge.

BASIC DOUBLE-BEVEL PROCESS

A Controlled Sharpening Sequence

This overview is for standard double-bevel kitchen knives. Traditional single-bevel knives require different knowledge and technique.

Check for chips, bends, uneven bevels, rust, and previous damage.

Prepare and Flatten the Stone

Follow the water instructions and confirm the surface is level.

Set a Consistent Angle

Match the established geometry when appropriate. Consistency matters more than chasing one universal angle.

Sharpen the First Side

Work heel to tip with controlled strokes and even coverage.

Confirm a Burr

A consistent burr on the opposite side shows that you reached the apex.

Repeat until the burr moves back across the entire edge.

Reduce Pressure

Finish with progressively lighter strokes to reduce burr size.

About sharpening angles

The appropriate angle depends on steel, geometry, thickness, intended use, and the maker’s design. Matching the existing bevel is often a better starting point than forcing every knife to the same number.

BURR FORMATION

The Burr Confirms You Reached the Apex

A burr is a thin fold of metal that forms on the side opposite the stone as sharpening reaches the cutting edge.

Feel Carefully

With the knife stationary and facing safely away, check from the spine toward the edge. Never slide a finger along the edge.

Check Heel to Tip

A continuous burr shows that the apex has been reached along the full edge.

Do Not Over-Grind

Continued heavy grinding after burr formation wastes steel and can make deburring harder.

Deburr Thoroughly

Alternate light strokes and use an appropriate finishing or stropping method.

A large burr can create false sharpness.

The edge may feel sharp initially but fail quickly when weakened burr material folds or breaks away.
