Knife Care

Hand wash and dry your knife immediately after use. Do not place it in a dishwasher. Avoid cutting frozen food, bones, or other hard materials unless the knife is designed for that purpose.

Store the blade in a knife block, saya, blade guard, or on a suitable magnetic strip.

Eligible knives purchased from Tetsu & Oak include their first standard sharpening at no additional cost. Proof of purchase may be required.

Major chip repair, thinning, rust removal, reprofiling, and restoration work are not included.

This double-sided ceramic whetstone combines a #1000 medium-grit surface for routine sharpening with a #3000 fine-grit surface for refining the edge and reducing the remaining burr. It provides a practical two-step progression for maintaining sharp, smooth-cutting kitchen knives without requiring separate stones.

Directions:

Prepare the stone with water according to the manufacturer’s instructions. Begin with the #1000 side to establish and sharpen the edge. Once an even burr has formed on both sides, move to the #3000 surface and use lighter strokes to refine the scratch pattern and reduce the burr.

Finish with gentle alternating passes. Keep the working surface wet throughout sharpening.

Care:

Rinse both surfaces thoroughly after use and allow the stone to dry completely in a well-ventilated area before storing. Flatten each side periodically to maintain consistent sharpening contact.

Do not leave the stone submerged for extended periods or expose it to freezing temperatures, extreme heat or a dishwasher.
