Knife Care
Hand wash and dry your knife immediately after use. Do not place it in a dishwasher. Avoid cutting frozen food, bones, or other hard materials unless the knife is designed for that purpose.
Store the blade in a knife block, saya, blade guard, or on a suitable magnetic strip.

Major chip repair, thinning, rust removal, reprofiling, and restoration work are not included.

Designed to follow a medium-grit stone, the #4000 surface smooths the scratch pattern left during sharpening, reduces the remaining burr and produces a cleaner, more refined cutting edge. It offers a practical finish for Japanese kitchen knives without taking the edge to an excessively polished level.
Its full 210 × 70 mm surface provides comfortable working room for both compact and full-size kitchen knives.

Directions:
Use after establishing the edge on a medium-grit stone such as #1000. Prepare the stone with water according to the manufacturer’s instructions and place it on a stable, non-slip surface.
Sharpen using light, controlled strokes while maintaining a consistent angle. Keep the surface wet throughout use and finish with alternating passes to minimize the remaining burr.
Care:
Rinse the stone after sharpening and allow it to dry completely in a well-ventilated area. Flatten the surface periodically to maintain consistent contact with the blade. Do not place it in a dishwasher or expose it to extreme heat.
